Motivation. IIM Trichy - one of the most prestigious MBA colleges in the country - has increased the intake to 410 students for the batch, 2022-2024. This number combined with the 280 students in the batch of 2021-2023 make the total number of students living on campus to a humongous 690 during the academic year of 2022-2023. Assuming the number of hostel rooms are sufficient for approximately 700 students, the mess area, which serves the four important meals of the day will have to serve lunch from 12:30-2:30 pm everyday. Acknowledging the concern, the mess committee is trying to understand better ways to plan food serving system. The same can be applied to breakfast, dinner and snacks. Having seen all the facilities, they are good for the current strength of 400(students on campus due to COVID). Considering the current COVID situation, mess committee is expecting 600 on campus and need to estimate if the current facilities would suffice or any changes to be made to plan the food servicing intelligently . After the process monitoring, they observed the problem of queuing and capacity utilization..

Description of As-is process. For the academic year 2021-2022, there were approximately 400 students eating from the mess on a daily basis, as some students were not on campus due to COVID-19. Assumptions: In the current process, the number of students eating lunch from the mess (between 12:30-2:30 pm) can be divided into two categories. Students who come to the mess after 1:45 pm as they have classes and students who eat in the mess from 12:30-1:45 pm. The normal hours between ( 12:30-1:45 pm) service 200 students in a 75 minute time period. The peak hours between (1:45 - 2:30 pm) service 200 students in a 45 minute time period..
